  • 300 grams pumpkin
  • 1 tbs Olive oil
  • bunch of parsley
  • 1/4 cup Pomegranate seeds
  • 1 avocado
  • 2 cucumbers
  • For the dressing:
  • 1 lemon
  • 2 tbs lemon
  • 2 tbs pomegranate molasses
  • Salt to taste


  1. Chop the pumpkin into cubes and brush with olive oil.
  2. Roast in a 200C oven until cooked and browned.
  3. Chop veggies into desired shapes and mix with the cooled pumpkin.
  4. Drizzles the dressing and mix well. Garnish with pomegranate seeds.
