How Healthy Are These Bites?

Recipe 

As mentioned before, this recipe doesn’t have a lot of ingredients, so you can easily make it without any hassle. So without further ado, here’s the full recipe.

Ingredients

  • 12 fresh tiger prawn cutlets (or any medium/large prawn/shrimp)
  • 1 continental cucumber
  • 2 cloves of crushed garlic
  • 2 tbsp Molassity Pomegranate Molasses
  • 3 tsp of fresh lemon juice
  • Fresh dill
  • 1 large avocado
  • Salt & pepper to taste
  • 2 tsp olive oil for pan

Method

  1. In a mixing bowl, mix crushed garlic, a pinch of salt, pepper,  2 tsp lemon juice, and 1 tbsp of Molassity Pomegranate Molasses. Toss prawns through the mix and set them aside. 
  2. In another mixing bowl, mash avocado, 1 tsp of lemon juice, and a pinch of salt and pepper to taste. 
  3. Cut the cucumber into 1-1.5 cm thick rounds and place the pieces on a serving plate. 
  4. Heat a pan on medium-high heat, and add 1 tsp olive oil. 
  5. Start adding the prawns, but don’t overfill the pan, as they could become tough and watery. You want them nice and crispy!
  6. Cook either side of the prawns for 2 to 3 minutes, or until you get a nice, bright red color. 
  7. Add the smashed avocado layer onto the cucumber and top it up with the cooked prawn.
  8. Drizzle the reserved 1 tsp of Molassity over the bites and serve immediately.
  9. Add a skewer if you need to secure the layers when serving them on a platter and to allow guests to pick up the bites.
