Bulgur pomegranate salad

Ingredients

  • 2 cups bulgur wheat
  • 2 tbsp tomato paste
  • 1 bunch green onions
  • 1 bunch Italian parsley
  • 3 tbsp olive oil
  • 2 fresh lemons
  • 2 cups boiling water

Method

  1. Place the bulgur wheat in a mixing bowl and add 2 cups of boiling water, stir once to mix consistently and let it stand for 1 hour.
  2. Add the tomato paste and stir thoroughly, adding a little water if necessary.
  3. Chop the onions and the parsley and add to the bulgur mixture.
  4. Juice the lemons, adding the juice and olive oil.
  5. Stir ingredients until thoroughly mixed, adding salt and pepper to taste.
